Italian Rainbow Cookies

Italian rainbow cookies are a classic, soft almond cookies layered with raspberry jam and topped with chocolate.

They are usually dyed to resemble the Italian flag, but for pride month, I am giving them a twist with all of the vibrant rainbow colors.
